QACs function as cationic surfactants that disrupt bacterial cell membrane integrity through electrostatic interaction with anionic phospholipid head groups, providing broad-spectrum bactericidal activity with no rinse requirement at label use-dilution concentrations (FDA Food Code permits QAC food-contact sanitizers at 150-400 ppm without rinsing). However, sub-lethal QAC residues on surfaces have been demonstrated to select for antimicrobial resistance: QAC resistance genes (qacA, qacB, smr) are frequently co-located on mobile genetic elements with antibiotic resistance genes, raising concerns about cross-selection of antibiotic resistance in food-service environments.
